Preheat oven to 400 degrees.
With skin on, slice potatoes into thin strips and place in large bowl of water to soak for at least 15-20 minutes.
While potatoes are soaking, prepare seasoning mix. Combine shredded Parmigiano Reggiano, garlic powder, onion powder, paprika, salt and pepper. Set aside.
Drain potatoes and pat completely dry. Toss in large bowl with olive oil, Parmigiano Reggiano, salt and pepper.
Spread out on parchment-lined baking tray. Bake approximately 30 minutes, then turn heat up to 425°F for an additional 10-15 minutes, flipping halfway through.
Remove from oven and toss with seasoning mix.
