RECIPE GRILLED CHICKEN PARMIGIANO REGGIANO

Ingredients
  • 4 chicken breasts
  • 1 bottle italian dressing
  • 1 medium yellow onion, julienne sliced
  • 1/4 cup extra virgin olive oil
  • 3 cup red and yellow grape tomatoes, halved
  • salt and pepper
  • 1/2 cup Parmigiano Reggiano®, shaved
  • 1/4 cup chopped parsley
PREPARATION
  • Marinate chicken breasts in Italian dressing for 1 hour. Slightly pound breasts to keep uniform is shape, trim excess.

  • Grill both sides 6 to 8 minutes until internal temperature reaches 165 °F, set aside.

  • Sauté onions in oil until translucent and begin to brown slightly, set aside. Gently sauté tomatoes in oil until warm, sprinkle in salt and pepper.
